Best Roast Beef Rub
If you know anything about me, you know how much I love a good pot roast recipe. They are a staple in my household! But, what makes a pot roast recipe truly stand out above the rest is the perfect pot roast seasoning.
While they were growing up, my kids must have enjoyed a pot roast nearly every other week. I loved being able to set a pot roast to cook at the start of the day, then have it ready for dinner by the time they got home from school or football practice.
Of course, it isn't like me to stick with just one seasoning recipe... so I experimented with different roast beef seasoning recipes every time I made one! This result is one of my personal favorites. It's sweet, salty, and so delicious with all kinds of beef roasts.
Give this easy roast beef rub a try for your next pot roast recipe or beef tenderloin, and I know you will love it as much as my family does. This rub can take a weeknight beef roast dinner and make it restaurant-quality!
Pot Roast Seasoning FAQs
What spices are good with roast beef?
A variety of spices are good with roast beef, but to build a good roast beef seasoning, I recommend starting with the basics: salt, pepper, and garlic powder. From there, you can add other seasonings, such as fresh or dried herbs like thyme and rosemary, or sweet elements like brown sugar. My pot roast seasoning includes brown sugar, Spanish paprika, black pepper, sea salt, and garlic powder.
How do you season a roast before cooking?
Before seasoning the roast, brush it all over with olive oil. This will help the seasoning stick to the roast and ensure a nice crust when cooking. Season the beef all over, then pat it down with your hands to cover the entire roast with seasoning.
How far in advance can you season a roast?
You can season a roast just before cooking, after allowing the roast to come to room temperature.
Roast Beef Seasoning Ingredients
- Brown sugar
- Sweet Spanish paprika - do not use smoked paprika
- Garlic powder
- Fresh ground black pepper
- Sea salt
How to Season Roast Beef
- Add brown sugar, sweet Spanish paprika, ground black pepper, garlic powder, and sea salt to a bowl.
- Mix thoroughly until fully combined. If storing for later use, add to an airtight container such as a jar and store in a cool, dry place.
- Brush roast beef with olive oil, then sprinkle seasoning over top. Pat down to encrust the beef with seasoning. Cook, serve, and enjoy!
Roast Beef Seasoning Tips
- Make sure to use sweet Spanish paprika, not smoked paprika, for best flavor results.
- Brown sugar typically lasts about 18 months when properly stored, so you can count on your roast beef seasoning lasting at least that long stored in a cool, dry place in an airtight container.
- If you want, you can leave out the paprika and use a mix of other herbs, such as thyme and oregano. This will produce a more herbaceous sweet flavor.
- Use approximately 2 Tablespoons of seasoning per pound of beef. This recipe creates a little over 1¼ cup, exactly 22 Tablespoons.

- 1 cup brown sugar
